Does anyone have a good recipe of cupcakes to share?
I really love them but I suck at cooking.. sad

If you have a hard time making cupcakes, you need to do it the easy way! Just buy your
favorite flavor of cake mix (chocolate, lemon, strawberry, etc) and follow the easy directions
of just adding water, egg and oil. Mix for about two minutes. Now you do need a cupcake pan
and you can put the cute little cupcake papers in it or spray with oil so the cupcakes won't stick
(I prefer the cupcake papers, hehe). Then just fill them about 1/3 full (as they bake they will rise)
and bake for the correct time at the correct temperature (see the instructions on the cake mix box).
To make sure they are done, I always take a toothpick and stick it in the middle and then when you
take it out look at it. If it comes out clean, the cupcakes are done. If it comes out a little dirty, that
means it needs to cook a little bit longer. When they are done, turn the cupcake pan upside down (while
wearing oven mitts -it's hot!) and shake a little till they all fall out. Let them cool for about 15 minutes, and
then you can frost them it you want, or just eat plain. Either way, it's very yummy!

Coconut is one of my favorite flavors and we had some fresh from the oven for a delicious dessert to dinner last night.

We ate them again today for morning tea, and although they were still nice they are best eaten fresh from the oven.

The raspberry on top provides a fantastic tart contrast to the sweetness of the coconut macaroon type cake.

Use either almond meal or hazelnut meal depending on taste and what you have in the pantry. I had run out of almond meal, so I used hazelnut meal which results in a more speckled appearance.


Ingredients
1½ oz (40g) desiccated coconut
6 oz (175g) confectioners (icing) sugar
7 oz (200g) all-purpose (plain) flour
3 tbsp ground almonds (or hazelnuts)
1 tsp baking powder
4 oz (115g) melted butter
5 egg whites
12 raspberries
Method
1. Pre-heat the oven to 375oF (190oC).
2. Line a 12 cupcake pan, with cupcake papers.
3. Combine the coconut, sugar, flour, baking powder and almond meal in a large bowl.
4. Stir in the melted butter.
5. Stir in the egg whites, until well combined.
6. Divide the mixture evenly between the cake cases.
7. Top each cake with a raspberry.
8. Bake for 12 to 15 minutes - until firm to touch.
7. Allow to cool for a few minutes and then transfer to a wire rack.

Vegan Cookies and Cream Cupcakes[b]

I know what your thinking wtf??? I have always been anti-vegetarian and anti-vegan, but i swear to you that this recipes is amazing!! I love Vegan cupcakes

I can't take credit for the recipe but ive had it before and its EPIC!!!


1 cup soy milk
1 tsp apple cider vinegar
3/4 cup granulated sugar
1/3 cup canola oil
1 & 1/2 tsp vanilla extract
1 cup all-purpose flour
1/3 cup cocoa powder
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 cup coursely chopped vegan sandwich cookies (Newman O’s or if you’re near a Trader Joe’s they have them too.) Chop, then measure.

Then you:
Preheat your oven to 350 and line your cupcake pan with paper liners. In a large bowl, whisk together the soy milk and vinegar and set it aside to curdle. Add the sugar, oil, and vanilla to the soy mixture and beat until foamy.
In a separate bowl, sift together the flour, cocoa powder, baking soda, baking powder and salt. Add the dry mix in two batches to the wet ingredients and beat until no large lumps remain. Mix in cookie chunks.
Pour into lined pan, filling each cup 3/4 full and bake 18-20 minutes or until toothpick inserted in cake comes out clean. Transfer to a wire rack and cool completely.
For the frosting you will need:

1⁄2 C. Non-Hydrogenated Shortening
1⁄2 C. Non-Hydrogenated Margarine
3 1⁄2 C. Confectioners’ Sugar, sifted if clumpy
1 1⁄2 t. Vanilla Extract
1⁄4 C. Plain Soymilk or Soy Creamer
1/2 cup crushed vegan sandwich cookies

Then you:
Beat shortening and margarine together until well combined and fluffy. Add sugar and beat for about 3 more minutes. Add vanilla and soymilk, beat for another 5 to 7 minutes or so until fluffy. Fold in cookie crumbs and top each frosted cupcakes with a half of a cookie.
